Autumn Apple Cake

Tools: Large mixing bowl and fork OR electric mixer with paddle attachment, medium bowl, 9-inch tube pan or 9 x 12 x 2-inch cake pan

This rich, warm cake is perfect for autumn holiday meals. The simple recipe turns out an elegant dessert for your Rosh Hashanah or Succot table when you use a tabe pan or bundt pan. Use green apples and the tartness sings out against the sweet, spicy cake.

  • 1 1/2 cup(s) oil (canola or vegetable)
  • 2 cup(s) sugar
  • 3 eggs
  • 1 teaspoon(s) vanilla
  • 3 cup(s) flour
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) cinnamon
  • 1 teaspoon(s) baking soda
  • 1 cup(s) chopped walnuts
  • 1 cup(s) raisins (optional)
  • 3 peeled, cored, thickly diced apples

1. Preheat oven to 350.

2. Grease and flour, or spray with cooking spray, a 9-inch tube pan or a 9 x 13 x 2-inch cake pan.

3. In a large bowl or in the bowl of a standing mixer, beat together the oil and sugar. (Use the paddle attachment if you're using a standing mixer.)

4. Add eggs and beat until creamy.

5. Add vanilla.

6. In a separate bowl, sift together the flour, salt, cinnamon and baking soda. Stir the mixture into the batter and mix well.

7. Add the walnuts, raisin (if using), and diced apple. Stir to blend.

8. Pour batter into cake pan, using a spatula to distribute batter evenly. Bake for 1 hour and 15 minutes, or until golden on top and a knife inserted into the cake comes out clean.
